Lemon Pudding Cookies

1 cup buttermilk baking mix (I use Pioneer Brand Buttermilk Baking
Mix...I got it at Walmart)
3-3/8 oz. (small package) instant lemon pudding
1 large egg--lightly beaten
1/4 cup vegetable oil
sugar
Recipe
Preheat oven to 350. Grease (or line with parchment paper) 2 cookie
sheets. Mix first 4 ingredients in a large bowl until dough forms. Roll
dough into 1-inch balls. Place balls about 2 inches apart on prepared
cookie sheets. Dip flat-bottomed glass into sugar. Press glass onto dough
ball and flatten into 1/4-inch cookie. Repeat with remaining cookies.
Bake until just golden brown on edges, about 10 minutes. Transfer to
wire racks to cool completely.
YIELD: about 20 cookies
