RAISIN FILLED COOKIES

(Maybe from Woman's Day years and years ago, like in the 50's)
List of Ingredients
4 c. flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
¼ tsp. nutmeg
1 c. granulated sugar
1 c. light brown sugar, packed
3 eggs
2 tsp. vanilla

Raisin Filling
Mix well ¾ c. sugar and 1 T. corn starch. In small saucepan heat 1 c.
water
and 2 c. seedless raisins to boiling. Add sugar mixture then boil
gently,
stirring until liquid is clear and slightly thickened and raising
plumped.
Cool and stir in 1 tsp. vanilla. Set aside.
In large bowl mix flour, baking powder, baking soda, salt and nutmeg.
Thoroughly mix in sugar until all particles are fine. Beat eggs with
vanilla. Add to flour mixture and mix thoroughly with fork to a smooth
dough. Chill several hours or overnight until firm enough to handle
easily.
Divide dough in several portions. Work with one at a time, keeping
remainder refrigerated. On floured pastry cloth roll dough to 1/8 inch
thickness. Cut with floured 2" cookie cutter. Re-rolling and cutting
scraps. Put scant teaspoon filling on each circle and top with a plain
circle. With tongs of floured fork press edges to seal. If desired cut
a
decorative dent in top cookie.
Bake 1 ½ inch apart on ungreased cookie sheet pan in preheated 375º
oven
until deep golden brown about 10-12 minutes.
Remove at once to rack. Cool
If desired sprinkle with confectioners sugar.
Makes about 66 cookies.
