    Caramel Custard Cups

    Turn on oven and set at 350 degrees (Moderate)

    Press 1-tablespoon brown sugar lightly into each of 4 custard cups.

    Mix in a 1-quart bowl
    2-eggs, slightly beaten
    1-cup evaporated milk (not sweetened condensed)
    2/3-cup water
    1/3-cup sugar
    1 1/2-teaspoons vanilla
    few grains of salt.

    Pour carefully over brown sugar. Set cups in a shallow pan holding 1
    inch
    of hot water. Bake 50 minutes, or until knife inserted near edge of
    custard
    comes out clean. Cool. Loosen edges with knife and unmold.

    Serves 4.
