Caramels with Milk Chocolate

9 oz granulated sugar
1 1/2 cups light cream; (18-20% fat)
9 oz light corn syrup
6 tablespoons salted butter
7 oz milk chocolate
Recipe
In a saucepan, place the sugar, cream and corn syrup and boil until
244°F, until a drop of caramel droped in a dish "stands", meaning it
has to to be somewhat firm. Remove mixture from heat and add
chocolate. Mix until the chocolate melts and when the temperature
reaches 95-104°F, add the butter. Lay mixture out about 1
centimeter thick in a square baking pan. Place in refrigerator until
chilled and then cut into small uniform sticks.
