"soul food cook book" by bob jeffries. it was published in 1969.
"my grandmother made these from green (i mean not ripe) apples right off
the tree in her back yard. she served them up with ham, mashed
potatoes, ham gravy, cole slaw, butter beans (also from her garden) and hot
biscuits. now THAT was good eating."
List of Ingredients
4 large green apples (granny smith is the best these days)
3 T. butter
2 T. sugar
dash of nutmeg
Recipe
core and slice apples, getting three thick slices from each. discard
end pieces. melt butter in a large skillet over low flame. add apple
slices in single layer and cook, turning only once, until tender but still
firm (about 8-10 minutes). sprinkle sugar and nutmeg over surface of
apples, cover the skillet and continue cooking until sugar has melted.
