CREAMED SPINACH

Recipe Introduction
I use this concoction everywhere from eating it "straight" as
described to stuffing mushrooms/zucchini/cabbage leaves...as well as
spreading it on toasted bread slices for an hor d'ourve...tasty
stuff...use your imagination as far as the listed amounts...i.e. if
you are a garlic-fanatic....by all means add more...same with
bacon...pepper, etc...
List of Ingredients
1 onion...your choice of size...minced
2 cloves garlic, crushed or minced
2 tablespoons butter
1 tablespoon flour
1 package (10 ounces) frozen spinach, thawed/drained sqweezing out
ALL the moisture you can
4-5 slices cooked, drained, crumbled bacon
1/2 teaspoon salt
1/2 teaspoon FRESHLY cracked black pepper
1 tablespoon lemon zest
juice of the one lemon you just zested
1 cup sour cream (or if you don't have it on hand...buttermilk and/or
half-n-half or heavy whipping cream would work well to...just have at
it...this is a VERY forgiving recipe)

...saute your onion and garlic in the butter until transluscent, but
still has a "NIP" to them...
...stir in your flour and allow to cook slowly for about a
minute...just to incorporate and lose that ICKY raw flour nastiness...
...add your spinach and seasonings (including your lemon stuff) and
stir constantly until it reaches the desired consistency (as in thick-
ish)...
...remove from the heat and THEN add your sour cream (or
buttermilk/cream/etc...)
...once that's all blended together fold in your crumbled bacon...
...serve hot/warm...and enjoy the heck out of it...
