Mediterranean Turkey Wraps

List of Ingredients
Six 8-inch flour or flavored flour tortillas
6 oz. container prepared hummus
1 1/2 C. baby spinach leaves
1 1/2 C. chopped cooked turkey
6 T. chopped cucumber
6 T. sliced pitted Kalamata or black olives
6 T. chopped tomatoes
6 T. crumbled low-fat feta cheese
Recipe
Spread tortilla with 2 T. hummus to within 1/4 inch of edge. Cover with
1/4 C. spinach leaves, pressing lightly into spread. Top with 1/4 C.
turkey and 1 T. each: cucumber, olives, tomatoes and feta cheese. Roll
up tortilla tightly. Repeat with remaining tortillas. To serve, cut
each
tortilla diagonally in half. Makes 6 servings.
NOTE:
To bring some changes, use different spreads, such as flavored cream
cheese, and varying your choice of fresh vegetables and cheeses.
