Taquitos Blancos y Negros
This recipe from the coastal
city of Veracruz is often
served with a variety of
dipping sauces.
List of Ingredients
1/4 cup butter
� 2 ears of corn, shucked, cleaned and
kernels removed
� 1/2 onion, chopped
� 2 jalape�o chiles, stems and
seeds removed, chopped
� 1 pound black beans, cooked and mashed
� 1/2 cup vegetable oil
� 20 corn tortillas
� 2 cups cream
� 2 cups mild cheddar cheese, grated
Recipe
In a large sauce pan, heat the butter
and fry the corn until done.
Add the onion, jalape�os and beans,
and cook until the moisture is almost
gone, then set aside.
Heat the oil in a skillet and fry the
tortillas briefly.
Stuff the tortillas with the corn and
bean mixture, then place them in a baking
dish.
Add the grated cheese and cream, cover,
and bake at 300 degrees F for 10 minutes,
or until the cheese is melted.
Yield: 8 to 10 servings
