Taquitos Blancos y Negros
This recipe from the coastal
city of Veracruz is often
served with a variety of
dipping sauces.
List of Ingredients
1/4 cup butter
• 2 ears of corn, shucked, cleaned and
kernels removed
• 1/2 onion, chopped
• 2 jalapeño chiles, stems and
seeds removed, chopped
• 1 pound black beans, cooked and mashed
• 1/2 cup vegetable oil
• 20 corn tortillas
• 2 cups cream
• 2 cups mild cheddar cheese, grated
Recipe
In a large sauce pan, heat the butter
and fry the corn until done.
Add the onion, jalapeños and beans,
and cook until the moisture is almost
gone, then set aside.
Heat the oil in a skillet and fry the
tortillas briefly.
Stuff the tortillas with the corn and
bean mixture, then place them in a baking
dish.
Add the grated cheese and cream, cover,
and bake at 300 degrees F for 10 minutes,
or until the cheese is melted.
Yield: 8 to 10 servings
