Banana Jam

2lb very ripe bananas
3 1/2 fl oz lemon juice
3 cups (1 1/2 lb) sugar (warmed)
Recipe
Chop banans and put into a large pan with the lemon juice and sugar.
Bring to the boil and skim any scum with a scimmer or slotted spoon.
Cook the jam over medium heat for 30 mins, then reduce the heat and
simmer, stirring
frequently for 15 to 20 mins. Or until jam is thick and a pale red
colour. Remove any scum from the surface.
This is a bit hit and miss, as here I usually bring the jam back up
to a full rolling boil and boil stirrring for 5 mins. I usually check
the temp of the jam after 5 mins to see that it has reached setting temp.
Remove from the heat and spoon immediately in to clean warm jars and
seal. I then BWB for 5 mins. Remove from BWB dry jars and leave to
cool. Label and date before storing.
