Chicken
gumbo (freeze the gumbo then all you have to do is
dump it out of the container, into a pan and set to
reheat as it thaws.. make a pot of rice and once the
gumbo is boiling, serve it over the rice), lasagna,
stuffed shells, turkey or chicken that has been boiled
or baked is always deboned and packed into small
freezer bags to be used later in making chicken and
dumplings, chicken and noodles, chicken tetrazzini or
scallopped chicken. Ham and beans freezes well,
homemade spaghetti sauce, Stuffed shells or manicotti.
One quick hint.. on things like the lasagna, shells
and manicotti... I line 9" square pans with foil, make
the dish and pop it into the freezer.. when frozen
solid, take out the foil liner and wrap and stack..
that way I have the pan for later.. just unwrap all
but the original layer of tin foil and pop it back
into the pan.. that way my pan is already lined and it
cuts down on cleanup afterwards. :)
