1 pound lean ground beef
1/2 cup dry breadcrumbs
1/4 cup chopped onion
1/4 cup chopped green bell pepper, optional
1/4 teaspoon pepper
1/4 teaspoon pepper
16 ounces seasoned tomato sauce (Mexican or Italian)
3 cups cooked rice
3/4 cup shredded cheddar, lowfat cheese
Recipe
Combine first six ingredients with half of the tomato sauce. Pat the
meat mixture into the bottom of a 9-inch square pan. Combine rice with
remaining sauce and half of the shredded cheese. Spoon the rice
mixture onto the meat layer. Place remaining cheese in a smaller
freezer bag.
To Freeze: Slide pan with small bag of cheese inside a 2-gallon
freezer bag. Seal and label. Freeze.
To Serve: Thaw and bake at 350 degrees F for 25 to 30 minutes.
Sprinkle baggie of frozen cheese over top of casserole and bake about
5 minutes more or until cheese melts. Serves 6.
