Zippy Vegetable Casserole (TNT)

3 cups fresh plum tomatoes, seeded and chopped
3 cups zucchini, shopped
3 medium onions, chopped
3 cloves garlic, minced
1/4 cup fresh parsley, minced
1/4 cup fresh basil, finely chopped
1 cup mozzarella cheese, shredded
2 1/2 cup bread crumbs
Recipe
Coat a shallow baking dish with nonstick vegetable spray. Place
tomatoes,
zucchini, onions, garlic, parsley, and basil in pan. Mix together
cheese and
bread crumbs. Toss 1 1/2 cups of the crumb mixture with veggies.
Sprinkle
remaining crumbs over top of veggies. Refrigerate until ready to bake.
Bake at 350 for
about 55 minutes.
