    Paul's Country Fried Steak

    List of Ingredients




    2 to 2 1/2 lbs. boneless round steak, tenderized and cut into serving
    size
    pieces
    1 t. salt
    1/4 t. pepper
    1 cup flour
    1/2 cup bacon drippings
    1 medium onion, chopped
    2 T. flour
    1-2 cups water or milk
    1 can (6 oz) sliced mushrooms

    Recipe



    Combine flour, salt and pepper in a plastic bag. Drop pieces of steak
    into
    bag and shake to coat well. Heat bacon drippings in an iron skillet
    until hot.
    Brown steak in drippings, remove from pan, drain, and transfer to a 9 x
    13"
    baking pan. Add chopped onions to skillet and saute until tender. Ad 2
    T. flour
    and brown until darkened. Add 1 to 2 cups water or milk gradually to
    browned
    flour to make a gravy, stirring as it thickens. Add mushrooms. Pour
    gravy over
    steak, cover and bake at 325 for 30-45 minutes until tender. If gravy
    begins to
    thicken too much, add some water or milk. Paul is our resident expert
    on
    country fried steak...his version is most delicious. Serves 6 to 8
