The secret is, "not opening the oven, even a little
bit". Works great like on a Sunday morning, around
7:00 am. Pre-heat oven to 500 degrees. Flour you
roast, and in a hot skillet, brown the roast on all
sides. Put 2-3 cups of water in a roaster, then put in
browned roast. Peel and quarter some potatoes, carrots
and sliced onion. Season like you normally do a pot
roast, and cover. Put roaster in oven for 1 hour, then
turn off heat, and "DO NOT PEEK". Go to church, and
when you get back, "everything is done to perfection".
Remove roast, slice, heat pan drippings, add a little
flour or cornstarch, and you have some wonderful
gravy.
