KILLER FROZEN DAIQUIRIS [non alcholic]
1 (6 oz.) can frozen limeade
(Kroger brand works best)
2 teaspoons rum extract
ice (cubes or crushed)
1/4 cup powdered sugar
1 tablespoon lime juice
40 to 48 oz. capacity blender,
capable of crushing ice*
if not crush ice before adding.
Put all ingredients in blender. Pack
blender 3/4 full with ice and blend at high speed.
Mixture should begin to liquefy in 1 to 2 minutes. Vary
blender speed
or stop and mix with spoon to get the mixture
consistent. If
the mix ices up too solidly, add more liquid of your
choice. If mixture is too
loose, add ice, if there is blender space. Drink
immediately.
(Before it melts!)
BLENDER COLESLAW [freezeable]
1 head cabbage, quartered or
size to fit in blender
1 Tbsp. salt
1 green pepper, quartered
1 carrot, cut to fit blender
1 c. vinegar
1/2 c. water
2 c. sugar
1 tsp. mustard seed
1 tsp. celery seed
Place quartered cabbage in blender 1/2 full. Cover with
water and shred 30 seconds. (Pause between each
10 seconds as not to overheat blender.) Shred one
head of
cabbage, cover with
1 tablespoon salt and let stand one hour. Squeeze out
all
liquid and add shredded pepper and carrot. (Cover with
water
in blender, shred and pour in strainer.) Mix remaining
ingredients, vinegar, water, sugar, mustard and celery
seed
and boil one minute. Pour over vegetables, cool and
serve.
May be frozen nicely.
Impossible Salmon Pie
1 can (15 ½ ounces) salmon, drained
1 med. Onion, chopped (about ½ c.)
1 small green pepper, chopped (about ½ c.)
½ c. shredded Swiss cheese or your choice of cheese
1 ½ c. milk
½ c. BLM
3 eggs
½ tsp. dried tarragon leaves
½ tsp. salt
1/8 tsp. pepper
Srpinkle salmon, onion, green pepper and cheese
evenly in
lightly
greased 10x1 ½ inch pie plate
mix rest of ingredients in blender.pour over
ingredients in
dish and bake in a 400 F degree oven until done.
bake Impossible Salmon Pie uncovered in 400* oven
until
knife inserted in
center comes out clean. About 35 minutes.
CORN PUDDING (BLENDER)
1 c. milk
3 eggs
4 Tbsp. sugar
3 Tbsp. flour
1 tsp. salt
4 Tbsp. butter
1 (10 oz.) pkg. partially
thawed corn
1 c. milk
Put milk, eggs, sugar, flour and salt into blender and
blend. Melt butter in baking dish (8 x 8-inch) in the 350
degrees
oven. Pour corn into blender and set on chop. Chop
corn but
leave the kernels so they can be identified. Pour
mixture
into
baking dish and add milk; stir in butter. Bake at 350
degrees for 50
minutes, folding 3 times within the last 20 minutes of
cooking.
BLENDER FUDGE CAKE
2 c. flour minus 2 Tbsp.
1 tsp. baking soda
1 c. sugar
1/2 c. cocoa
1 stick margarine, softened
1 more c. sugar
1 c. water, room temperature
1/2 c. buttermilk, room
temperature
2 large eggs
1 tsp. vanilla
Sift together in large bowl the flour and baking soda.
Mix in blender the sugar, cocoa and margarine. Add
the second
cup of sugar and water. Blend well. Add to flour
mixture and
mix well. Blend buttermilk, eggs and vanilla in
blender. Add to batter and mix well. Pour into greased
and
floured 9-inch
cake pans or a 9 x 13-inch cake pan. Bake at 350
degrees for
25
minutes or until toothpick comes out clean. Cool and
frost.
Blender Cake Frosting:
3/4 c. cocoa
4 cups powdered sugar
1/2 c. butter or margarine,
softened
1 tsp. vanilla
1/2 c. evaporated milk
Mix cocoa and sugar. Cream part of cocoa and sugar
mixture with butter. Blend vanilla and 1/2 of the milk.
Add
remaining cocoa and sugar mixture; blend well. Add
remaining milk; beat to desired spreading consistency.
