    BREAKFAST

    BELGIUM WAFFLES , WHIPPED TOPPING, AND STRAWBERRIES AND
    BANANAS
    Ingredients:
    1 package dry yeast or equivlant
    2 cups lukewarm milk
    4 eggs, separated
    1 teaspoon vanilla
    2-1/2 cups sifted flour
    1/2 teaspoon salt
    1 Tablespoon sugar
    1/2 cup melted butter

    Sprinkle yeast over warm milk; stir to dissolve. Beat
    egg yolks
    and add to yeast mixture with vanilla. Sift together flour,
    salt,
    and sugar; add to liquid ingredients. Stir in melted butter
    and combine thoroughly.
    Beat the egg whites until stiff and carefully fold into
    batter.
    Let mixture stand in a warm place about 45 minutes or
    until
    it doubles in bulk. Use 1-1/3 cups mix per waffle.
    Sprinkle
    with powdered sugar.
    SERVE WITH FRUIT
    ours will be bananas and berries
    1/2 cup per serving
    HOT CHAI CHOCOLATE TEA
    Make your favorite chai tea and add chocolate sweetened
    cocoa mix.
    ICE WATER

    LUNCH/DINNER
    CREAM OF POTATO AND BARLEY SOUP
    2-3 POUNDS OF POTATOES [cubed]
    1 CAN EVAPORATED MILK OR SUBSTITUTE
    1/2 CUP UNCOOKED BARLEY
    1 ONION [chopped ]
    SWEET BASIL OR PARSLEY TO TASTE
    To a large pot , add uncooked barley and chopped onion to 2
    quarts
    water.
    Bring to a boil.
    Reduce to low heat for 45 minutes or so until tender,add
    cubed
    potatoes.
    Bring to a boil and cook until potatoes are tender.
    strain and add a can of evaporated milk and water until
    soup is
    consistency you prefer.
    Lots of times I just use evaporated milk and very little
    water.
    Save water ,you cooked mixture in ,for gravies and
    sauces...do not
    throw away.Freeze if you must in cubes or small proportions.

    CRACKERS
    YOU CAN MAKE HOMEMADE IF YOU LIKE
    use your pasta roller and you can make your favorite bread
    dough into
    crackers buy rolling dough very thin and baking until
    crisp.
    No pasta roller ..roll by hand.
    I use my wire pronged meat tenderizer to prick crakers
    instead of
    fork...much faster.
    SALADS
    ICE WATER
    ICE HERBAL TEA
    We are having Cranberry Cove brewed with green tea
    FRUIT FILLED BURRITO
    2 cups fruit thickened
    4 burritos
    oil for frying
    powdered sugar or cinnamon sugar
    We are having apple filling.

    DINNER/SUPPER
    CHOICE[S] OF SALADS
    MEATBALLS STROGANOFF OVER HOMEMADE NOODLES
    3 cups of flour
    3 large eggs
    water to make a dough but not sticky
    you can make with your dough hook or by hand
    into thick noodles of medium width
    4 cups gravy
    1/2 cup sour cream [I use non fat]
    1-2 cups mushrooms or to taste
    This really varies in my household as to what is in the
    freezer. If
    using canned I just use 1 small can because of price.

    meatballs
    1 pound ground meat or substitute like 2 cups cooked
    cracked wheat,
    tofu etc
    1 onion
    1 bell pepper
    1 carrot
    4 ounces saltine crackers crushed
    1/2 cup ketchup
    In a blender container add chunked veggies and water to
    liquify.
    Then pour veggie mixture over meat,crackes and ketcup you
    have added to a large bowl.
    Next mix,mix , mix until throughly mixed. This resally makes
    a
    difference to the outcome of your meatloaf texture.
    shape into meatballs.
    Bake in 350 F degree oven until cooked and then add to gravy
    mushroom mixture. Serve over noodles .
    Add sour cream last to gravy.
    Only use 3/4 of the meatball mixtute at this meal..th rest
    should be
    shaped into very tiny balls for a soup later .
    cook all balls now.
    ICE WATER
    GINGER TEA
    FRUIT OVER SHERBET OR ITALAIN ICE
