    Tuesday:
    BREAKFAST
    PANCAKES....$.40
    WHOLE WHEAT BUTTERMILK PANCAKES with FRUIT

    1 cup BUTTERMILK
    1 EGG
    3 Tbsp. BUTTER or MARGARINE, melted
    1/4 cup FLOUR, all purpose
    1/2 cup FLOUR, whole wheat
    1 tsp. BAKING SODA
    Fruit*

    *fresh or frozen FRUIT, such as strawberries, blueberries or

    raspberries, allowing 1 tsp. per pancake.

    Combine buttermilk, egg and butter in medium bowl. In
    separate bowl,
    stir together flours and baking soda. Combine with
    buttermilk mixture.
    Heat skillet or griddle to medium hot. Grease lightly and
    spoon 3
    tablespoons of batter per pancake. When ready to turn, add 1
    teaspoon
    of fruit to top of pancake. Turn and cook second side. Keep
    warm in
    200 degree oven until ready to serve.

    I am making the noodles thin in width, but thick and
    short...so they will be a little dumpling like.

    [sugar free]
    1/2 cup fruit per person mixed with 1/2 cup geltain per
    person
    CARROT/PINEAPPLE/RAISIN BREAD..........$.40

    GRAND TOTAL....$2.65 COMPLETE MEAL FOR 4 PEOPLE

    GARLIC BROTH
    1 eight ounce serving per person
    WHITE SAUCE 3 CHEESE FILLED SHELLS...$2.00
    We are having ,fatfree cottage cheese . mozzarella, and
    parmesan in
    ours.
    We will use a half pound fat free cottage cheese from
    freezer,3
    ounces of mozzarella and a thin
    grated layer of parmesan sprinkled over the top before
    baking.
    If you have any leftover broccoli of spinch you may want to
    add that
    also.
    I make my own shells .
    I make a noodle dough , rolled, then cut into 1 strips.
    cut the strips into squares or rectangles , pinch the length
    ends
    together to form a shell .
    let throughly dry...I do at least 24 hours and then cook,
    cool and
    stuff.
    I use bread crumbs,garlic powder, Italian seasonings,egg,
    grated
    mozzarella my cottagecheese is from
    the freezer, defrosted and I run it though the food
    processor or
    blender to make it like ricotta
    cheese.
    Cover with an herb garlic white sauce a.


    SALAD OR ANTIPASTA...$.60
    We have a cucumber , baby carrots, and some green beans ,
    to use up,
    so I will pour some leftover
    italian dressing over them and serve with some olives .
    make enogh to serve a half cup per person.

    RUM FLAVORED FRUIT OVER CAKE..........$1.00
    I have some rum syrup I made with rum extract and will serve
    mixed
    with canned peaches.
    You want to use a half cup fruit per serving.
    I am using 2 peach halves.
    GRAND TOTAL............$3.85 COMPLETE MEAL FOR 4 PEOPLE
