GINGERBREAD STACK PANCAKES WITH LEMON SAUCE TOPPED WITH
LEMON WHIPPED TOPPING
JO'S BUTTERMILK PUMPKIN PANCAKE
1 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 -1 1/3 cups buttermilk
3 tablespoons butter
1/2 c. canned pumpkin
1/4- 1/2 teaspoon pumpkin pie spices
Mix and bake on heated greased griddle [300-325 degrees].
Lemon sauce is lemon instant pudding mixed with twice as
much milk as package calls for and teaspoon lemon extract. I
like to heat mine for a few seconds before serving. I am
also adding some of my homemade lemon curd.
the whipped topping I just posted but adding a bit more real
vanilla extract and more lemon extract.
to make stack:
pancake, sauce, pancake, topping
WATER
CRANBERRY/RASPBERRY WHIP
Frozen cranberries, crushed ice and pure raspberry juice.
BREADED MAPLE BACON STRIPS
Dip bacon strips into flour and crushed cornflakes mixed.
Fry in medium hot skillet.
This really stretches the bacon.

LUNCH/DINNER
PRETZEL DOGS
Used soft pretzel ABM recipe posted this week.
I made the dough and baked pretzels during the cool of the
night.
I used some of the dough to make pretzel dogs.
I made kosher salt pretzels, and cinnamon sugar ones. and
two garlic/poppy seed as we were out of sesame seed.
LIMEADE

1 eight ounce glass per person
WATER
CORN
4 BEAN SALAD
JELLO MINT CHOCOLATE INSTANT PUDDING
This is a new to us product. It is good but not outstanding,
but very good.

DINNER/SUPPER
BARBECUED HAM OVER CORNBREAD
Ham is from freezer, and I made cornbread during cool of
night.
CHOICE OF SALAD[S]
Potato salad, carrot/pineapple/raisin salad, bean salad,
pickled beets
LIME GELTAINS MADE WITH REAL LIME JUICE
There are 2 kinds, one made with lime jello and real lime
juice.
The other is my sugar- fee made with lime juice, unflavored
geltain and sweetner.
WATER
LEMON ICE TEA OVER SHAVED MATCHING ICE
PUMPKIN BREAD MINI LOAVES SLICES WITH CREAM CHEESE
Spiced cake mix with pumpkin/puree mixture from freezer
[thawed]. I added soaked raisins, the raisin water will be
used to sweeten my tea.
I used less water and no oil and just one egg.
