Baked Beef Quesadillas

2 tsp. vegetable oil
1 large onion, sliced
2 cans (4 oz. ea.) chopped green chiles, drained
1/4 tsp. salt
1 lb. flank steak, cut into thin strips
6 (10 inch) flour tortillas
2 cups (8 oz.) shredded Monterey Jack cheese Recipe
1. Preheat oven to 400º F. Heat oil in a medium skillet over medium
heat. Add
onion and cook, stirring occasionally, until tender, about 10 minutes.
Add
chiles and salt to onion; stir well. Add steak strips. Cook over
medium-high
heat, stirring occasionally, until browned, about 5 minutes.
2. Place 3 tortillas on baking sheets and layer Monterey Jack and steak
mixture on tops. Cover with remaining tortillas. Bake quesadillas until
cheese is
melted, about 5 minutes. Use a wide spatula to transfer quesadillas to
cutting
board and cut into wedges.
Makes 4 to 6 servings.
