Homemade Cornbread Mix

9 C. all-purpose flour
4 T. baking powder
3 C. yellow cornmeal
4 tsp. salt
3 C. sugar
Recipe
Mix all ingredients together with a wire whisk in large bowl. Store in
airtight container at room temperature.
When ready to make bread, follow these quick instructions:
3 3/4 C. cornbread mix
2 eggs, beaten
1 1/2 C. milk
2 T. margarine, melted
Preheat oven to 350 degrees F.
Place "mix" ingredients in mixing bowl; make a well in the center for
liquid ingredients. Combine eggs and milk; pour into well in mix center.
Add melted butter and stir until moistened but do not over mix. Bake in
well-greased bread pan (9 inch square works well) 35-45 minutes or
until wooden pick inserted in center comes out clean.
