Apple-Cranberry Muffins

2 eggs
1 cup milk
1/2 cup vegetable oil
1 cup sugar
3 cups flour
4 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 cup dried cranberries
1/2 cup golden raisins
2 small cooking apples, peeled, cored, and chopped
Cinnamon sugar (1/4 cup granulated sugar mixed with 3/4 teaspoon ground
cinnamon)
Recipe
Preheat oven to 400 degrees. In large bowl, beat eggs, milk, oil and
sugar. Stir in flour, baking powder, salt, and cinnamon; mix just until
blended (batter will be thick). Fold in dried cranberries, raisins, and
apples. Fill greased muffin cups 2/3 full. Sprinkle with cinnamon sugar
mixture. Bake 20 to 25 minutes or until muffins test done.
