Apple Muffins

1 1/2 C. firmly packed brown sugar
2/3 C. vegetable oil
1 egg
1 C. buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 1/2 C. diced apples
1/2 C. chopped pecans
2 1/2 C. flour
1/3 C. sugar
1 tsp. melted butter
Recipe
Preheat oven to 325 degrees F.
Combine the first three ingredients. In another bowl, combine
buttermilk, soda, salt and vanilla; add to sugar mixture alternately with flour,
mixing after each addition. Fold in apples and pecans. Pour into muffin
papers in muffin pan. Combine sugar and melted butter; sprinkle on top
of each muffin. Bake 30 minutes or until cake tester comes out clean.
Makes about 15 muffins.
