Ham And Cheese Muffins

2 eggs
3 cups biscuit mix
1 cup milk
3 tablespoons vegetable oil
4 ounce package or 1 cup of shredded cheddar cheese
3/4 cup or 1/4 pound cooked ham, chopped
Recipe
Heat oven to 400 degrees. Spray bottoms and sides of 12 regular-size
muffin
pans. Do not use paper baking cups.
Beat eggs slightly with a fork. Stir in biscuit mix, milk and oil
until
moistened. Stir in 3/4 cup cheese and all of the ham. Divide batter
evenly
in the cups. Sprinkle with remaining 1/4 cup of cheese.
Bake 18 to 20 minutes or until light golden brown. If baked ahead,
store
wrapped in the refrigerator.
