    1 box Manicotti noodles (we like the kind that DON'T have ridges)
    1 large container cottage cheese, small curd (fat free does not work
    well, 4% works best)
    3 cup bag of Italian blend shredded cheese or shredded mozzarela
    Oregano to taste
    Parmesan cheese (optional)
    1 large jar of spaghetti sauce

    DO NOT COOK NOODLES! Heat spaghetti sauce over low heat while mixing
    the cottage cheese, 2 cups of the shredded cheese and oregano. Using
    a spoon, fill the uncooked noodles with the cheese mixture. (I used
    to be able to get my kids to help with this.) Put a little of the hot
    spaghetti sauce in the bottom of a 9 x 13 baking dish that has been
    sprayed with cooking spray. Place the filled noodles in a single
    layer in the pan and if there is any filling left over fill in the
    spaces with it. Cover completely with remaining spaghetti sauce and
    then top with remaining cheese.

    Bake at 375 degrees for 45 minutes. Using hot spaghetti sauce will
    cook the noodles while baking. However, I usually put this dish
    together the night before and bake it the next night. It really is
    wonderful


    This is for people who like manicotti but don't feel like they have the
    time
    to stuff them. Try this.

    Mix the ingredients for the filling. Spoon into a baggie (a ziploc
    works
    fine too). Squeeze out the air and seal. Snip off a corner leaving a
    hole
    the same size as the noodles that you want to fill. Now grab the bag,
    aim
    the snipped corner into a noodle and squeeze. The filing will pop
    right in
    there. If you are having trouble getting the filling to go into dry
    noodles
    rather than cooked ones, rinse the noodle in cold water just before you
    begin to fill it. The way the filling slips in easier.

    The baggie method works great for other things too. We buy our pizza
    sauce
    by the gallon from Costco. I bag it up in ziplocs in the amount that I
    use
    per pizza. Freeze it laying flat and thawing takes about 4 minutes in
    a
    sink of hot water. Then just snip a corner and spread on your pizza.

    Traveling? Put sandwich fillings in a bag. Squeeze onto bread when
    you are
    ready for them.
