Easy Pasta Calda

1 medium onion
4 cloves garlic
1 can Italian tomatoes (35 oz)
1 pound rigatoni pasta
1/2 cup olive oil
1 cup shredded mozzarella cheese (4 oz)
Fresh basil (optional)
Recipe
Mince onion and garlic. Set aside. Drain the tomatoes and cut into
chunks.
Cook rigatoni until al dente. While rigatoni is cooking, prepare the
sauce. Pour
olive oil into pan; add garlic and onion and simmer for 2 minutes. Add
cut
tomatoes and continue cooking for 4 minutes. Drain rigatoni and add to
tomato
mixture. Stir in mozzarella cheese until melted. Garnish with fresh
basil if
desired. Serves 6
