    Because guessing how much pasta to cook for one
    usually means leftovers, every solo cook should have this recipe in
    mind.

    List of Ingredients




    Preheat the broiler. Whisk 2 large eggs with 2 tablespoons milk and
    about 1/2 teaspoon coarse salt and pepper. Mix in 1 1/2 cups plain
    cooked spaghetti, 1/2 cup shredded cheddar, Swiss or other cheese and 1/4
    cup peas (dipped from a bag of frozen peas). In a small broiler-proof
    nonstick skillet, heat 1 teaspoon olive oil. Pour in the egg mixture and
    cook until the top is almost set, about 5 minutes. Transfer to the
    broiler and cook until set, about 1 minute.
