Vegetable Calzone

1 can (10 oz.) refrigerated pizza crust
1/2 cup tomato sauce
2 cups (8 oz.) Mozzarella cheese, shredded
1 can (14.5 oz.) tomatoes with garlic and onion, drained
1 cup assorted fresh vegetables, chopped
1/2 cup Parmesan cheese, grated
Recipe
Preheat oven to 375° F.
Unroll pizza crust onto cookie sheet. Stretch crust to a 12" x 12"
rectangle.
Spread tomato sauce evenly on 1/2 of the crust, to within 1" of the
edge.
Sprinkle with half of the Mozzarella cheese, diced tomatoes and
vegetables,
then sprinkle second half of Mozzarella cheese.
Reserve 1 tablespoon of Parmesan cheese, sprinkle remaining cheese over
Mozzarella cheese.
Fold crust over filling and seal edges with a fork. Sprinkle with
reserved
Parmesan cheese.
Bake 25 to 30 minutes or until golden brown. Let stand 5 minutes before
cutting.
Serves 6.
