    FRENCH FRIED POTATO PUFFS

    2 cups leftover, seasoned mashed potatoes,
    2 well beaten eggs,
    and 4 slices crumbles,crisp bacon.
    sift together:
    1 cup of flour,
    2 teaspoons baking powder,
    and 1 teaspoon salt.
    Stir into potato mixture .
    Blend well.
    Heat fat, 2 inches deep, in a deep fat fryer or pan to375
    degress F on a fat thermoter, or until a 1 inch cube of
    bread browns in about 40 seconds.
    Drop potato mixture by the teaspoons into hot fat.
    Fry 3-5 minutes, or until brown.
    excllent with roast beef. Makes 6 servings.
