    you now have perfect cut potatoes for fries. Now,
    soak in water as they are being cut. This does two things. First it
    stops Oxidation (causing coloring or turning brown). Rinse water until in
    is clear (this removes a lot of the 'binding starch on the surface.
    They will help the fries crisp and stop them from clubbing together.
    After that, I soak one more time in a salt and sugar solution (about 2 t.
    salt to 1. sugar. tor 4 average sized potatoes) for 10-20 minutes.
    Rinse a couple more times. Drain and with a paper towel (old news paper
    and brown grocery bag do a great job). Pat as dry as you can. THIS A
    VERY IMPORTEQT STEP!

    Now, here is the choice: oil fried or crisp just about fat free?

    4 potatoes (prep instructions above)
    1 egg white ( I use reconstituted egg white powder called just the
    whites)
    seasoning/flavoring
    non-stick spray
    a bit of paprika ( gives sublime color)

    In a large mixing bowl prepare potatoes. Mix in 1 egg white or
    reconstitutes powered egg whites. Use very clean hands,pour egg white over
    the potatoes, mix well as to cover all "fries". Now, add seasoning.
    Some like just salt and pepper. That's great too, but *I like more
    flavor.

    Toss 1 to 2 t. of y seasoning of our choice (Cajun, season salt.
    celery salt, MYO blend, cheaper taco seasoning package, ect.). SPRAY A FEW
    TIMES OVVER THE FRIES STILL IN THE BOWL.. Mix well to cover fries(1/2
    t. appox.) with paprika.

    Ling two large cookie sheet with tin foil .Generously sprayed with
    non stick spray onto foil lined cookie sheets. Spread out your fries.
    using cooking sheets in on layer, and plenty of room between the fries.
    Bake in a 450 F oven for 10-15 minutes. Until fried are soft, and has
    taken on some color. With large spatula turn fried over. Then continue
    to bake for 5-20. It will depend how you like you fries.
