Rustic Home Fried Potatoes

2 T. margarine
3 medium potatoes, thinly sliced
1 medium sweet onion, halved and thinly sliced
2 cloves garlic, minced
2 T. parsley, dried
1 T. rosemary, dried and crushed
1/4 t. salt
1/8 t. ground red pepper
1/8 t. ground black pepperRecipe
In a large skillet, melt margarine. Layer the sliced potatoes, onion
and
garlic in the skillet. Sprinkle with parsley, rosemary, salt, ground
red pepper,
and ground black pepper. Cook potato mixture, covered, over medium heat
for 8
minutes. Continue cooking, uncovered, for 8 to 10 minutes more or until
potatoes are tender and brown, turning frequently.
