CHESSIES PLEASING CHEESY CHICKEN

1 1/2 c. milk
3/4 c. BLM
4 eggs, slightly beaten
2 lb. boneless skinned chicken
breasts, cut into strips
1/2 tsp. salt
1 tsp. pepper
3 Tbsp. margarine
4 c. mushrooms, quartered
1/2 c. chopped onion
1 (8 oz.) pkg. Velveeta, cubed
8 oz. Swiss cheese, cubed
Recipe
Preheat oven to 375 degrees.
Grease 3 quart casserole.
Beat together milk, BLM and eggs until smooth.
Pour half of mixture into casserole dish;
reserve remaining half.
Bake for 15 minutes.
Meanwhile, saute chicken with salt and pepper
in 2 tablespoons of the butter in a large skillet until no
longer
pink.
Transfer with slotted spoon to paper towel. Add
remaining butter to skillet.
Add mushrooms and onions
and saute until mushrooms begin to soften.
Spoon chicken, onions and mushrooms into casserole.
Top with cheeses.
Top with remaining BLM mixture.
Bake 30 minutes or until top is crusty.
Should be spoonable not firm.
