    2 strips bacon
    1 lb. boneless, skinless chicken breast, cut into 1" pcs
    1 cup thinly sliced celery
    1 med. potato, cut into 1/2" cubes
    1 cup sliced scallions
    1 can (8 oz.) bamboo shouts
    1 1/2 tsp. five-spice powder
    1/2 cup water
    1 tbsp. dry sherry
    1 tbsp. low-sodium soy sauce
    2 tbsp. corn starch
    1 tsp. sugar

    Recipe



    Cook the bacon in a skillet over med. heat until crumbly, about 5 min.
    Drain
    on paper towels, crumble and transfer to the crockery pot.

    Pour off all but 2 tsp. of the bacon drippings, and add the chicken to
    the
    skillet. Brown the chicken on all sides; then transfer it to the
    crockery
    pot. stir in the next 8 ingredients. Cover and cook on LOW until the
    chicken
    is cooked through and tender, 6 to 8 hrs. In a measuring cup, combine
    the
    cornstarch, 2 tbsp. water, and sugar. Pour into the chicken mixture and
    cook
    until the liquid has thickened, about 3 min
