Easy Creamy Rice Pudding

Serves 6 to 8
List of Ingredients
1 cup rice
2 quarts milk, divided
1 cup sugar
3 eggs
2 t. vanilla extract
1 can evaporated milk (13 oz)
Raisins (optional)
Cinnamon
Nutmeg
Recipe
Cook rice in 1 1/2 quarts milk. Bring to a boil and simmer. Cook until
well
done, allowing milk to evaporate. While rice is cooking, combine 1/2
quart
milk, sugar, eggs, vanilla and evaporated milk in a large bowl. Beat
with a whisk.
When rice is cooked, raise heat to medium and pour egg mixture over
rice and
mix well. Stir constantly until mixture comes to a boil. Boil for less
than a
minute; add raisins if desired. Pour into serving dishes and top with
spices.
