Golden Cheese Rice Casserole

2 1/2 c. ground or grated carrots
8 oz. med. sharp cheese, ground or grated
2 c. cooked rice
2 eggs, beaten
1/4 c. milk
1 T. butter or margarine, melted
1 T. grated onion
1 t. salt
1/8 t. pepper
Recipe
Mix lightly carrots, cheese and rice.
Combine egg, milk, butter, onion,
salt and pepper; add slowly to carrot
mixture, stirring lightly until
blended. Turn into a greased 1 1/2 qt.
casserole. Cover. Bake at 350° for 40
min. makes 6 servings.
