    1 cup butter or margarine
    2 large stalks celery (with leaves) -- (1 1/2 cups) chopped
    3/4 cup onion -- finely chopped
    9 cups soft bread cubes -- (about 14 slices bread)
    2 tablespoons fresh sage leaves -- chopped
    OR
    1 1/2 teaspoons dried sage leaves
    1 tablespoon fresh thyme leaves -- chopped
    OR
    1 teaspoon dried thyme leaves
    1 1/2 teaspoons salt
    1/2 teaspoon pepper

    Melt butter in Dutch oven over medium-high heat. Cook celery and onion
    in
    butter, stirring occasionally, until tender; remove from heat.

    Toss celery mixture and remaining ingredients. Stuff turkey just before
    roasting.

    Yield: 9 cups stuffing (enough for a 12-pound turkey)

    If you don't want to mess with stuffing the turkey, bake
    your favorite stuffing separately.

    Place it in a greased 3-quart casserole or rectangular
    baking dish, 13 × 9 × 2 inches. Cover and bake in a 325º
    oven for 30 minutes; uncover and bake 15 minutes longer.
