    List of Ingredients




    Soup:

    1 lb. ground beef
    2 C. (4 medium) chopped onions
    2 C. (2 medium) sliced carrots
    2 C. chopped celery
    6 C. water
    28 oz. can whole tomatoes, undrained
    2 tsp. salt
    1/2 tsp. pepper

    Dumplings:

    1 1/2 C. flour
    1/2 C. milk
    2 eggs
    1/2 tsp. salt

    In Dutch oven, brown ground beef and onions; drain. Add all remaining
    soup ingredients. Cook over medium heat until mixture comes to a boil
    (35-40 minutes). Reduce heat to low, continue cooking until vegetables
    are crispy-tender (15-20 minutes). Meanwhile, in small mixer bowl,
    combine all dumpling ingredients. Beat at medium speed, scraping bowl
    often, until smooth (1-2 minutes). Press batter through colander or
    drop
    by teaspoonful into soup. Continue cooking until dumplings are tender
    (6-8 minutes). Season to taste. Makes 12 (1 cup) servings.
