5 lbs. beef bones
4 qts. water
4 carrots, peeled and chopped into lg. pieces
6 ribs celery, chopped into lg. pieces
3 yellow onions, washed, cut in half, leave the peel on
Recipe
Preheat the oven to 400°. Place bones in
single layer in a roasting pan. Roast the
bones, uncovered, until nicely browned. Place
bones in a stock pot and add the rest of the
ingredients. Bring the mixture to a boil, then
reduce to a simmer. Simmer for 6 hours,
adding more water if necessary, or until stock
has a full flavor. Strain the stock, skim off fat
and refrigerate or freeze if not using
immediately. Makes 3 qts.
