Recipe Introduction
Except for the rice and parsley, this is about how grandma used to
make it. She would make a double batch, and then on the second day,
she would add a can of tomato sauce, black pepper to taste, and some
cooked noodles and call it Minestrone soup..lol. You wouldn't
believe how much a small can of sauce could change the flavor.
I am going to try this recipe minus the meat, because I am vegan,
and I am going to add the rice. I am interested in seeing how the
rice will add to this dish. Sounds great.
List of Ingredients
2 C. cubed fully cooked ham or turkey sausage
> 1 C dry split peas
> 1 C. chopped onion
> 1 C. chopped celery with leaves
> 1 C. shredded carrot
> 2 T. snipped fresh parsley
> 1/2 t. dried thyme,crushed
> 1/4 t. pepper
> 4 C. chicken broth
> 2 C. water
> 1 C. quick-cooking rice
Recipe
In the crockpot, combine ham, peas, onion, celery, carrot,
> parsley, thyme, and pepper. Pour chicken broth over all.
> Cover; cook on low heat setting for 10-12 hours or on
> high setting for 4-5 hours. Stir in rice. Cover; let stand
> 5 minutes or till rice is tender. Makes 6 servings.
