Crockpot Navajo Beef And Chile Stew

Makes about 4 servings.
List of Ingredients
3/4 lb. lean beef stew meat, cut into 3/4-inch cubes
1 large onion, chopped
2 cloves large garlic, minced
1 can (14 1/2 ozs.) ready-cut tomatoes with juice
1 can (7 ozs.) diced green chilies, drained
1 can (18.5 ozs.) whole-kernel corn, undrained
1 1/2 tsps. dried oregano leaves, crushed
1 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. ground red pepper
2 tbsps. yellow cornmeal
Recipe
Combine all ingredients except cornmeal in a 3 1/2-quart crockpot,
mixing well.
Cover and cook on low 7 to 8 hours or until meat is tender.
Turn control to high. Stir in cornmeal.
Cover and cook on high 20 to 25 minutes.
