2 small heads of garlic ,peeled and crushed [smash
them with something, I use my chef's knife]
2 teaspoons cooking oil [some prefer olive oil ]
7 cups water
Recipe
To crush cut the cloves in half lengthwise. In a medium pot
heat the oil over low heat; do not let the pan get any hotter than the low heat. Stir the cloves often until translucent and soft, this will take about 20
minutes or so.
Pour in 7 cups of water, bring to a boil on medium
heat, then lower to low heat again and let simmer, uncovered
for 40 minutes, stir once in awhile.
Add salt and pepper for a seasoning if you like
This will make four 12 ounce servings on its own or can be used as a soup base.
