    List of Ingredients




    2 CUPS COOKED BLACK BEANS
    6 CUPS COOKED BEANS OF CHOICE..USE AT LEAST 3-4 KINDS
    Here is where color and shape can make a very tasty and
    beautiful dish. Mix white,reds, purples etc,
    4-6 CUPS COOKED RICE
    2-4 CUPS CANNED ,FRESH OR FROZEN TOMATOES
    1 1/2 -2 QUARTS POULTRY BROTH FROM CHICKEN OR OTHER POULTRY
    PREP
    3/4 CUP CHUNKY SALSA
    2 TEASPOONS GROUND CUMIN
    1 TEASPOON CRUSHED RED PAPER FLAKES
    1/2 CUP LIGHT SOUR CREAM OPTIONAL
    1 CUP CHOPPED ONIONS

    Recipe



    Place black beans in a blender and puree.
    In a large pot, stir rest of beans, tomatoes, broth, salsa,
    cumin and red pepper flakes and onions.
    Stir in pureed black beans.
    Cover and simmer for 10-20 minutes, stirring occasionally,
    until hot. Add cooked rice last two inutes.
    Ladle soup into bowls. Garnish with sour cream optional

    Note: For a smoother texture, puree all of the soup. Pureed
    soup can be chilled and used as a dip for chips or
    vegetables, or for a sauce to be served with rice. --
