    List of Ingredients




    3 oz. of bacon fat
    1 oz. of olive oil
    2 lbs. of onion, cut into thin strips
    2 oz. of marsala wine
    1 gallon of chicken stock
    1/2 gallon of beef stock
    1 teaspoon of thyme
    1 teaspoon of basil
    1 teaspoon of oregano

    Recipe



    Saute onion in fat and oil. Add wine and cook approximately
    5 minutes, until onion is soft. Add all the other ingredients.
    Simmer for 20 minutes. Skim fat from top of soup. Serve with
    croutons and grated Romano cheese.
