I make pumpkin pie filling (use your favorite recipe) and then I line the pie pans with foil leaving enough on each side to wrap after freezing, just pour the filling into the pie pan freeze then wrap with extra foil u left on the sides and put in large plastic bags, when I need a pumpkin pie i take off the foil place the frozen filling in a pastry shell and bake. No more starting from scratch and because I only pay 33 cents for shells (wonder where the author shops?) I just buy them.
But you can make and freeze those also but tricky to keep in the freezer.
You can also just cook the pumpkin and put into 1 cup servings and use as needed for those muffins, cookies etc.
