Prep dry ingredients....
Measure all the dry spices and bread crumbs for one recipe.
Pour the mixed spices into a sandwich bag or teacup.
Repeat X times (X times servings in recipe = 100 people)

Prep wet ingredients.....
I pour the milk into a coffee mug and add the eggs
Stir and pour
(This prevents the yolks from clumping the spices)

Onions.....
A small onion is about 3/4 -1 cup chopped coarsely
Chop 10-15 onions and set aside
Dip your measuring cup instead of doing each onion separately

Crackers or bread crumbs
I use bread crumbs from the store or mix them with crackers
I use a potato masher or ziploc/rolling pin to crush them
(this is a fun project for kids who want to help)

I never do more than double a recipe. It's harder to stir and
divide. I just line up five bowls (I have five loaf pans) and make
them in batches.
