Cheese-Topped Zucchini

3 medium zucchini squash
1 medium onion, thinly sliced
1 tablespoon salad oil
1/2 to 1 teaspoon crushed oregano
1 8-ounce can (1 cup) tomato sauce
1 6 or 8 ounce package sliced Mozzarella cheese
Grated Parmesan cheeseRecipe
Cut zucchini in half lengthwise. In a large skillet, cook onion in hot
salad oil till tender but not brown. Add zucchini halves, cut side up;
sprinkle with salt, pepper, and oregano. Pour tomato sauce over.
Cover; cook just till tender, about 10 minutes. Top zucchini with
cheese
slices; sprinkle with oregano, if desired. Pass Parmesan cheese.
Makes 6 servings.
