Chop Suey Bake for 25

6 lbs. chicken, cubed
2 T. salad oil
3 (1 lb. 4 oz.) cans mixed Chinese vegetables, drained
2 c. chopped onion
2 c. chopped green pepper
2 c. uncooked long grain rice
4 c. milk
1/2 c. soy sauce
4 (10 1/2 oz.) cans condensed cr. of mushroom soup
2 (3 oz.) cans chow mein noodles
Recipe
In a kettle or Dutch oven brown meat in
hot oil; sprinkle with 2 t. salt. Drain off
excess fat. Divide meat evenly between
two 13x9x2" metal baking pans. Combine
vegetables, onion, green pepper, and rice;
add half the mixture to each pan.
Gradually add milk and soy sauce to
soup, stirring till smooth. Add half the
soup mixture to each pan; mix well. Cover;
bake at 350° 2 hours, stirring
occasionally, or till rice is done. Uncover;
sprinkle one an noodles on top of each
pan. Bake 5 min. Makes 25 servings.
