Using a wire whisk combine batter to a smooth consistency:
1 cup club soda
1/2 cup self rising flour
1/2 cup of BLM
And just a little more Club Soda to give batter the
consistency of buttermilk (pourable). Moisten & lightly
flour 3 lbs. of fish fillets & let dry a few minutes. Dip
to coat in wet
batter. Fry a few pieces at a time in 2" of hot oil(385
degrees). Fry on each side until golden brown. Drain on
paper towel & serve promptly. Serves 4
iF YOU LIKE IT REALLY CRISP ADD 1/2 CUP VERY FINELY CRUSHED
CORNFLAKES TO THE BATTER.
