2 egg yolks
quarter cup sugar
half cup Marsala wine
250 grams Mascarpone cheese
1 cup real whipping cream
half cup extra strong coffee, percolated and cold
2 tablespoons brandy
24 Italian Ladyfinger biscuits (also known as Savoiardi)
1 cup semisweet cooking chocolate, finely chopped

Ingredient notes:
Orange liquor or extra strong coffee may be used instead of the Marsala wine. Cream cheese may be used instead of Mascarpone cheese. Orange liquor or orange juice may be used instead of the brandy. Plain cookies or cake may be used instead of Ladyfingers.
Make the filling by beating the egg yolks with the sugar until light. Beat in the Marsala. Cook gently in a double boiler or in a stainless steel or glass bowl set over a pot of simmering water. Cook gently, stirring constantly until thickened. Cool. Beat Mascarpone cheese until thick and
smooth and then slowly beat in the cooled custard. Whip cream until light. Gently fold into the cheese mixture. Reserve. Combine the coffee and brandy. Reserve. Line an 8 inch baking tray or trifle bowl with the Ladyfingers. Do not worry if the Ladyfingers do not fit exactly. break up
extras to fit into spaces. Drizzle with half of the coffee mixture. Spread half the filling over, then sprinkle with half the chocolate. Repeat the layers starting with the Ladyfingers, ending with the chocolate. Refrigerate for a few hours or overnight before serving. Can be frozen for
up to 1 month.
