    Recipe Introduction


    I am really not sure where the basics of this recipe are from originally, but my Mum always made if for us so we could enjoy it sitting outside on the warm Los Angeles evenings...


    List of Ingredients


    • 1 medium green pepper
    • 8 oz fresh tomatoes (or tinned)
    • 1 large red onion
    • 2 cucumbers
    • 1 clove garlic
    • 1 cup fresh parsley (chopped)
    • 1 tbsp lemon juice
    • 1 large tin tomato juice
    • 1 tsp sugar
    • 1 tsp salt/1 tsp pepper
    • 4 tbsp olive oil
    • 1 tbsp worcester sauce
    • 2-3 oz breadcrumbs
    • oregano


    Instructions


    1. Preg first by:
      Chop Green pepper and garlic
    2. Grate unpeeled cucumbers and onion
    3. Blanch and skin tomatoes, or use tinned tomatoes
    4. Place all vegetables (including parsley) in large bowl and add breadcrumbs. Stir.
    5. Gradually blend in tomato juice, oil, sugar, seasoning, lemon juice and worcester sauce (an immersion blender works great!).
    6. Taste and add more seasoning as necessary. I usually end up adding more pepper or worcester sauce.
    7. Chill for at least 3 hours.
      Enjoy!


    Final Comments


    Hint: In warm weather I always keep a large tin of tomato juice in the fridge that saves the chilling time. Also, if I'm in a rush I just chop all ingredients in braun chopper and don't bother to grate.
    Flavors improve with age!! Tastes great the next day!
    Definitely season to taste! Enjoy!
