    Beef Stroganoff

    List of Ingredients


    • 1 lb. boneless beef round steak, cut 3/4" thick
    • 2 tbsp. margarine, divided
    • 1/2 cup chopped onion
    • 1 can cream of mushroom soup
    • 1/2 tsp. paprika
    • 1/2 cup sour cream or yogurt


    Instructions


    1. Slice beef across the grain into very thin strips.

    2. In skillet over high heat, in 1 tbsp. hot magarine, cook 1/2 the beef and onion until meat is no longer pink and onion is tender; set aside. Repeat with remaining margarine, beef and onion.

    3. Return mixture to skillet. Stir in soup and paprika. Heat through. Stir in sour cream.

    4. Serve over hot cooked noodles.



    Final Comments


    My favorite noodles to use are the wide egg noodles. Use yogurt instead of sour cream to reduce the fat content.
